Indo-Pacific permit are a trophy sportfish that are mostly released. However, if you do choose to take one, their eating qualities can be improved if they are killed immediately by iki jime or a firm knock to the head before placing them in an ice slurry after bleeding.
Fish Description:
- A large pompano. Body silvery green to bluish-grey dorsally, silver flanks grading to white ventrally, sometimes with a bronze or greenish-golden tinge.
- Second dorsal fin and tail fins dusky orange to nearly black with darker leading edges and fin tips; anal and pelvic fins yellow.
Fish Distribution:
- These fish occur throughout the tropical Indo-western Pacific region from Taiwan to northern Australia.
- Frequents estuaries and sand flats both inshore and offshore.
Fish Size Common Length:
Common between 40 and 60 cm, maximum size exceeds 120 cm and 15 kg.
