Dispatch Method:
Beware of the sharp dorsal and anal spines of bream when handling them. The other species of bream found in Australian estuaries and inshore areas (e.g. black bream, yellowfin bream) have similar brain locations to the pikey bream. To maximise their eating qualities they should be killed humanely by iki jime, or a firm knock to the head before placing them in an ice slurry after bleeding.
Fish Description:
- Pikey bream have grey sides and fins. The dorsal and anal fins have very stout spines.
- At least 5 species of bream occur in Australian waters. All have similar brain locations.
- Bream are a group of fishes which are relatively slow growing, and long lived.
Fish Distribution:
- This species is found in tropical estuaries in the western Pacific ocean, from southern Japan to Australia. Similar species of tropical bream are also found throughout the coastal margins of the Indian Ocean.
- Recorded in Australia from the Northern Territory and throughout the Gulf of Carpentaria as well as far north Queensland.
Fish Size Common Length:
20-30 cm, maximum size around 60 cm.
