The eating qualities of these fish is greatly improved if they are killed immediately by iki jime, or a firm knock to the head before placing them in an ice slurry after bleeding.
Fish Description:
- Colouration greenish blue dorsally with faint yellowish longitudinal stripes and a faint black blotch in the middle of the flank. Tail yellowish with blue edges. Several thin wavy yellow lines radiating around the upper eye.
- As slow growing, long lived species.
Fish Distribution:
- Occurs on offshore reefs of southern Australia from southern NSW to south Western Australia including Tasmania.
- Depth range from around 20 meters to over 200 meters.
Fish Size Common Length:
40-50 cm, maximum size around 90 cm and 6.5 kg.
